Whole Wheat Pumpkin Poppers

I LOVE pumpkin, anything pumpkin (well, except for pumpkin pie- not a huge fan). I'm always looking for new pumpkin recipes and came across this one on Pinterest. The recipe comes from Just the Little Things and I only changed a few things. These little poppers are dang good. And even though they're rolled in sugar and butter, the amount of sugar and butter compared to other desserts is really not too bad. Your kids (and husband) will love you for making these!

Whole Wheat Pumpkin Poppers
1 cube butter (1/2 cup), melted
1/2 cup brown sugar
1 egg
1 teaspoon vanilla
3/4 cup pureed pumpkin or butternut squash
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon cloves
1 1/2 cup whole wheat flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk

Cinnamon sugar coating
Melted butter (1/2 to whole cube- I used a half cube)
1/2 cup sugar
2 tablespoons cinnamon

Preheat oven to 350 and grease mini muffin pans.

Cream butter, sugar, egg and vanilla. Stir in pumpkin and spices. Add flour, baking powder and salt. Stir in milk and mix well.

Scoop mixture into mini muffin tins, filling almost to the top. The Pampered Chef cookie scoop works great for this. Makes 24 to 36 depending on how full you fill your tins.

Bake 10-12 minutes then cool on cooling rack.

Mix sugar and cinnamon in a small bowl. Coat poppers in melted butter (or brush butter on) then roll in cinnamon/sugar mixture.
