Dark Chocolate Cream Cheese Truffles

These are super easy to make, really messy and oh so tasty.

Dark Chocolate Cream Cheese Truffles
8oz package of cream cheese
2 1/2 cups powdered sugar
4oz dark chocolate baking bar (I used Nestle, could also use semi-sweet or white chocolate)
cocoa powder, nuts, etc for dusting

Beat cream cheese with powdered sugar until smooth. Melt chocolate in microwave safe bowl at 70% power, stirring every 30 seconds. Stir into cream cheese mixture until smooth. Refrigerate at least 30 minutes.

Roll into little balls and coat with cocoa powder, chopped nuts, crushed candy canes, etc... I found it was easiest to use two spoons, drop the chocolate into the bowl of cocoa and lightly coat, then roll into a ball and  coat again. 

Refrigerate until ready to eat (if you can wait that long).
